morning bliny workshop ingredients
(make sure to have plenty of salt, pepper, and cooking oil on hand for the workshop)
Bliny:
2 C flour
1 C buttermilk, or milk
2 eggs
cooking oil
butter
sugar
baking soda
Ready boiling water will be needed for this recipe
Sweet-Cheese:
1 pkg dry cottage cheese (farmer’s cheese)*
OR ricotta (preferably extra smooth)vanilla greek yoghurt
lemon, to juice
vanilla
serving options :
1. your favourite jam, or
2. maple syrup, or
3. toasted nuts and icing sugar* NB : If using dry cottage cheese, you will need a food processor for the recipe.
Western Pressed Dry Cottage Cheese (76% moisture) is excellent (not blue package).
Meat:
1 lb ground pork (or beef)
1 C mozzarella or cheddar cheese, grated
1 onion
butter (for pan frying)
sour cream, to serve
dill, to serve
Tools to have ready:
measuring cups, both liquid and dry, and measuring spoons
3 medium sized mixing bowls
2-3 frying pans, including 1 non-stick for making bliny
food processor (if using dry cottage/farmers cheese)
pairing knife, vegetable peeler, cutting board
thin spatula, whisk, ladle
afternoon zakuski & vodka workshop ingredients
purchase one 750ml bottle of unflavoured vodka to make 3 infusions
vodka does not have to be premium
pepper vodka
“pertsovka”
infusion 1:
1 jalapeño, small
coriander seeds
black peppercorns
fresh cilantro sprigs
dill Vodka

infusion 2:
1 bunch fresh dill
1 clove garlic
lemon Vodka
“limonovka”
infusion 3:
1 ripe lemon
1 ripe orange, small

composed beet salad:
1 can whole beets, drained, cubed and chilled
2 med potatoes, boiled, cubed and chilled
2 sml carrots, boiled, cubed and chilled
2 med dill pickles, cubed
1/2 onion, finely chopped
1 can white navy or kidney beans
1 small jar sauerkraut
dijon mustard
white vinegar
fresh dill, finely chopped, to taste
sunflower oil, avocado oil, or your favourite neutral salad oil

Salmon plate:
smoked salmon (pacific coho is excellent)
vidalia sweet onion small, thinly sliced
fresh dill (garnish)
lemon wedges, to serve
Tools to have ready:
3 small mason jars with lids (125 to 175 ml)
small fine strainer
funnel
pairing knife, vegetable peeler, cutting board
lemon juicer
3 shot glasses
